Flavors Without Borders International Project
Objectives
The Flavors Without Borders project is an international initiative aimed at promoting culinary heritage, cultural exchange, and innovation in gastronomy. This platform fosters global collaboration between chefs, food producers, and culinary experts from the UNESCO Creative Cities of Gastronomy (UCCN). Rooted in Madinah’s rich culinary traditions, the initiative supports sustainable gastronomy practices while creating opportunities for global exchange and knowledge-sharing.
Scope and key Action
The initiative includes two key actions:
- KEY ACTION 1: A Structured Framework for Inter-University collaboration for mutual cultural exchange. This action focuses on creating a network for mutual cultural exchange between universities and culinary institutions across UCCN cities. It will include workshops, thematic dinners, and public cooking demonstrations, encouraging chefs to embrace and innovate within their culinary traditions. Additionally, visits to food production sites will offer valuable insights into sustainable and traditional practices, strengthening short supply chains and facilitating collaboration between chefs and local knowledge keepers.
- KEY ACTION 2: A Gastronomy Student Mobility Program and International Guidelines. This program aims to create a cohesive framework for global collaboration, focusing on gastronomy students’ mobility and institutional cooperation. The initiative will provide international guidelines to help universities across the UCCN strengthen cultural integration, program structure, and institutional collaboration. By facilitating mobility, students will gain hands-on experience in diverse culinary environments, contributing to the global exchange of knowledge and culinary expertise.
Stakeholders
The initiative is a formal partnership between Madinah and Kuching, Malaysia, with plans to expand to other UCCN cities within the UNESCO Global Network of Learning Cities. Key participants include chefs, food producers, culinary experts, university students, and professors.
